Wine-Oh! Sauce

Have leftover red wine (if such a thing is allowed to exist in your home)? Then make this wonderful sauce, which is perfect drizzled over vanilla ice cream, along with with chocolate sauce.
INGREDIENTS
1 ½ cups red
wine (any will do)
½ cup sugar
(try Turbinado raw cane sugar for a different taste)
1 vanilla
bean: split the long bean to open the seeds and pulp, but don’t scrape
out the insides
2 whole star
anise
1 teaspoon
pink peppercorns

Toss orange or lemon zest or maybe mint leaves into
your simmering concoction to add a little variety to your Wine-Oh!
Sauce.
INSTRUCTIONS
Combine all of the ingredients, including the split vanilla bean and its contents, in a medium-sized pot. Bring mixture to a boil, stirring to dissolve the sugar. Reduce heat to medium and continue stirring until the liquid has been reduced by about two-thirds to a thickened syrup or sauce. This may take 20 minutes or longer. Strain the thickened sauce to remove the pods, seeds, peppercorns, star anise and anything else you may have added.
Reward yourself immediately with a large bowl of ice cream drizzled with your hot Wine-Oh! Sauce, or refrigerate in a closed container and use as needed. Add chocolate syrup for a real treat; that’s our favorite way to eat it!
